Job description: Dietzel International is searching for a Sous Chef, required for a well known Landmark Restaurant, fine dining and upscale casual and lounge & bar service. This Restaurant is part of a progressive small BC Hotel & Restaurant chain.
The Restaurant is known for it's cutting edge, contemporary award-winning Pacific North West Cuisine.
Specific Duties and/or Job Responsibilities:
➢ Ensuring that a high quality product is delivered in a timely manner to all private dining and restaurant guests
➢ Responsible for all aspects of Culinary operations in the absence of senior culinary leadership
➢ Ensuring all kitchen colleagues are aware of standards & expectations
➢ Seek opportunities to increase food revenue, decrease kitchen expenses and maximize departmental productivity
➢ Training, coaching, and performance management of Culinary staff on an ongoing basis
➢ Staying current with culinary trends that will excite our guests and engage our culinary team
➢ Promoting professional work habits in our Kitchen and throughout the hotel
➢ Liaising daily with Restaurant Managers to keep open lines of communication regarding guest feedback
➢ Ensuring the cleanliness and maintenance of all work areas, utensils, and equipment
➢ Communicating a clear and consistent message regarding departmental goals to produce desired results
➢ Analyze trends and guest feed back to ensure a successful culinary operations
➢ Ensuring that all Health & Safety standards are met, procedures followed, and that colleagues have the correct knowledge and tools to work safely
➢ Other duties as assigned
Requirements
➢ FOODSAFE Level 1 certification required; FOODSAFE Level 2 certification preferred
➢ Possession of British Columbia Professional Cook 3 certification, Interprovincial Red Seal or similar
➢ Possesses keen eye for efficiency, above service standards, and problem solving abilities
